This is one I love.
Frozen, cooked shrimp, tails cut off (Find these in the freezer section. This is the recipe for half a bag)
6 cloves garlic, chopped
1 bundle green onions chopped (only the green ends)
1 tomato, diced
2 tbs salted butter (or whatever you have on hand if you're me)
1/2 box Barilla (that's what the recipe says, but I don't care!) angel hair pasta
Thaw shrimp in a bowl of warm-hot water. Bring large pot of water to boil and cook pasta for 4-5 minutes. Drain. In a pan, melt butter. Add shrimp and garlic- saute until shrimp are hot and garlic is translucent...don't burn the garlic. Add green onions and tomato and cook til warm-only takes a minute. Put pasta in a serving dish and pour contents of pan over pasta--sprinkle Parmesan cheese on top and enjoy!
